What do you know about Sweet Potatoes?


As we move into the New Year, many of us have decided to make eating healthy a priority. However, often, we feel like eating healthy can be boring or even tasteless. Blah! Well, I’m here to tell you, eating healthy can be fun. You have an opportunity to be creative and try new things. Today I want to discuss sweet potatoes. Most of the time, when we think about sweet potatoes, we either are preparing staple dishes like, candied yams or a sweet potato pie. Another familiar option includes sweet potato fries, all of which are pretty yummy. Today I will be preparing mashed sweet potatoes with a special organic super food (Mango Sea moss Gel) which has 92 minerals our bodies need each. These mashed sweet potatoes will be the high light to my baked salmon & steamed broccoli meal.

Well today, I would like to introduce you to mashed sweet potatoes, a very yummy dish, that I have grown to love. Today I will be preparing mashed sweet potatoes to go along with my baked Salmon and broccoli. Here’s all you need.


Mashed Sweet Potatoes /4 servings

1 ½ pounds sweet potatoes/peeled and cut

¼ stick of butter

½ banana

1 orange & zest from orange

½ cup of vegetable/chicken stock

¼ cup date sugar or brown sugar

¼ teaspoon nutmeg

¼ teaspoon cinnamon

Salt & pepper to taste

Cilantro to garnish

1 tablespoon of plain sea moss gel

Directions

Boil potatoes until tender/drain. Using same pot over medium heat. Add butter and bananas to pot. Allow bananas to cook for about 5 minutes, add juice from orange. Allow the juices to cook out for about 1 minute or so. Next, add your sweet potatoes, stock, sea moss gel, and sugar. Begin mashing the potatoes, bananas, stock, and sugar until well blended. Season with nutmeg, cinnamon, salt, pepper, and orange zest. Garnish with Cilantro (another healthy ingredient, we will discuss later) Enjoy!
